Gluten free bite

Recipe:

1,000 g GLUTEN-FREE SOFT KERNEL

80 g Dried cranberries

80 g Dried apricot pieces

80 g Chocolate chunks

80 g Hazelnuts

35 g Yeast

650 g Water

 

Procedure:

Kneading time: 10 min at medium speed using a spatula

Dough temp.: 26-27 °C

Weight: Approx. 50 g per bite. Use small rubber mats. Decorate with nuts.

Proving time: 40-45 min

Oven temp.: 250°C reduced to 200 °C

Steam: As normal at insert

Baking time: 14 min
