Recipe:

1000 g GLUTEN-FREE SOFT KERNEL

80 g Dried cranberries

80 g Dried apricot pieces

80 g Chocolate chunks

80 g Hazelnuts

35 g Yeast

650 g Water

 

Procedure:

Kneading time: 10 min at medium speed using a spatula

Dough temp.: 26-27°C

Weight: Approx. 50 g per bite. Use small rubber mats. Decorate with nuts.

Proving time: 40-45 min

Oven temp.: 250°C reduced to 200°C

Steam: As normal at insert

Baking time: 14 min

 

Ingredients: Water, sunflower seeds, tapioca starch, rice starch, potato starch, dried cranberries, dried apricots, chocolate

(cocoa mass, sugar, emulsifier (E322-soya), vanilla extract), hazelnuts, dried rice sour dough, linseeds, linseed flour,

pumpkinseeds, yeast, sugar, iodized salt, caramel powder (glucose syrup, sugar), stabiliser (E412, E415), psyllium fibre.
